What is Mead?
Mead is an alcoholic beverage fermented from a mixture of honey and water, often enhanced with fruits, spices, or herbs. It is one of the oldest known fermented drinks, with archaeological evidence dating back over 9,000 years. Unlike beer (fermented from grain) or wine (fermented from fruit), mead derives all of its fermentable sugar from honey, giving it a distinctive flavor profile that varies dramatically based on the honey variety, yeast strain, and fermentation conditions.
The fundamental challenge in mead making is calculating the correct honey-to-water ratio. Too little honey produces a thin, watery mead with low alcohol content. Too much honey can overwhelm the yeast, leading to stalled fermentation or excessively sweet mead. The target honey amount depends on the desired alcohol by volume (ABV), which in turn depends on the mead style you are making. Session meads (hydromels) target 3.5-8% ABV, standard meads range from 8-14%, and sack meads push 14-18%.
Beyond honey and water, successful mead requires proper nutrition. Honey is naturally nutrient-poor compared to grain wort or grape must. Without added nutrients (diammonium phosphate and Fermaid-O), the yeast will produce off-flavors including fusel alcohols, hydrogen sulfide, and acetaldehyde. Staggered nutrient additions spread the feeding across the first third of fermentation for cleaner flavors.
Honey to ABV Relationship
The relationship between honey quantity and final alcohol content follows a well-established approximation used by mead makers worldwide. Approximately one pound of honey dissolved in one gallon of water produces a starting gravity of about 1.035, which ferments to roughly 5% ABV. This provides the foundation for calculating honey requirements for any target ABV.

Honey Varieties and Flavor Profiles
The variety of honey you choose profoundly affects the flavor of your finished mead. Each honey type has a distinct flavor profile, color, and floral origin that translates directly into the final beverage.
- Wildflower: Complex, floral, variable. The most common and affordable option. Good for beginners.
- Clover: Mild, sweet, clean. Produces a light, approachable mead. The most popular mead honey worldwide.
- Orange Blossom: Citrus, floral, fragrant. Creates a bright, aromatic mead popular in commercial production.

Nutrition and Aging
Unlike beer wort or grape must, honey provides very little in the way of yeast nutrients. The most critical additions are diammonium phosphate (DAP) for nitrogen and Fermaid-O for organic nitrogen and amino acids. A standard schedule calls for 1 gram of each per gallon, split into three additions: day 1, at the one-third sugar break (roughly 1.090 OG), and at the two-thirds sugar break (roughly 1.050 OG).
Mead benefits enormously from aging. Fresh mead often has rough, hot alcohol flavors that mellow significantly over time. Standard meads typically need 6-12 months of aging before reaching their peak. Sack meads and fruit meads may improve for 2-3 years. Store mead in cool, dark conditions at 50-60°F if possible. The patience invested in aging is rewarded with dramatically smoother, more complex flavors.

5-Gallon Standard Wildflower Mead
