  • Honey is nutrient-poor - always add yeast nutrients
  • Stagger nutrient additions to prevent off-flavors
  • Aerate/degas daily for first 1/3 of fermentation
  • Mead benefits from extended aging (6-12+ months)
  • For sweeter mead, backsweeten after stabilizing with K-meta and sorbate
